A Personal Note from Tokyo: The Power of One Small Plate
In Tokyo, many of us live in a whirlwind of "hustle culture." For years, I survived on quick takeout and instant meals just to keep up with the pace of the city. Although I was a competitive athlete in my teens—playing tennis six days a week—my 20s brought a different reality. My body became sensitive to the seasons; barometric pressure changes caused headaches, and I caught colds far too easily. Even working out, which used to make me stronger, started to feel like a strain on my system.
I realized I needed a different kind of "training." Instead of pushing my body through exercise, I began focused on self-care through home cooking.
While a "one-plate meal" is convenient, I started using Mamezara (small plates) to intentionally add variety to my diet. I incorporated fermented foods, seaweeds (nutrient-dense superfoods), and Sashimi for natural vitamins. I chose sticky vegetables like okra and nutrient-rich whole foods over synthetic supplements or protein powders. This shift was transformative. My physical condition stabilized, and despite being a smoker, a recent skin age analysis showed that my skin health was at the youngest possible level—all while using a simple, humble bar of soap for cleansing.
